Proximate Composition, Amino Acid Profile, and Mineral Content of Four Sheep Meats Reared Extensively in Morocco: A Comparative Study

This study aimed to compare the organoleptic and nutritional quality of four sheep meats produced in Morocco. comparison was carried out by analyzing proximate composition, amino acid profile, mineral content meat. Iron zinc major identified trace elements, phosphorus potassium most abundant macroelements. glutamic, cysteine methionine least abundant. essential acids index (IEAA) (162.20, 158.71, 161.02, 159.65, respectively, for Timahdite, BGT, breeds, Ain Beni Mathar region). From a point view, studied good protein quality, due their richness microelements. present provided new insights on three Moroccan reared outdoor production system.
